Deep straw yellow in colour with a refined and persistent perlage. It has prominent notes of yeast with hints of crusty bread and delicate sensations of fresh and dried fruit. On the palate, it is fresh, balanced, harmonious and well-structured.
Vinification
Primary fermentation of Chardonnay and part of the Pinot Bianco takes place in steel vats, whereas the remaining Pinot Bianco is fermented in wood. They are aged for a few months on their lees, with blending taking place at the end of winter. This is followed by the start of essential secondary fermentation in the bottle. Subsequently, the wine remains on the lees for about 40 months. The production cycle ends with disgorgement and the addition of a small amount of liqueur d’expedition.
Tips
Do not allow the bottle to undergo excessive changes in temperature. It is good practice not to let the product remain for a long time in the fridge.
